Chicken a la king

The soup chicken:

Clean the soup chicken, wash it, put it in boiling salted water and add the soup greens, salt, pepper and the chilli pepper as usual.

Bring to the boil and skim, simmer for 2 - 3 hours.

Check the legs, they have to be really soft, then take them out and let them cool down.

Let the chicken stock stand a little and degrease.

Search the cooled chicken, discard the skin and bones.

Cut everything into bite-sized pieces; and place under some chicken stock.

The sauce:

Melt the butter, add the flour, stir well with the whisk, set aside, allow to cool a little and pour about 1 liter of the cooled chicken stock, stir until smooth. Then comes the milk, the cream and the crème fraiche.

Simmer for at least 10 minutes until the glue in the flour has boiled out

In the meantime, clean the peppers and mushrooms and cut into strips or slices.
