Pasta arrabiata

The Pasta arrabiata is our favorite pasta. It goes quickly, always tastes delicious, spicy and hot. Three things that we like a lot. In addition, you need few ingredients for it. Here we have it recipe for this simple pasta variation.

Ingredients for 2 people:

  • 800 g fresh tomatoes or 2 cans of tomatoes
  • 1 clove of garlic
  • 1 onion
  • Chilli flakes
  • Italian spices
  • olive oil
  • Salt pepper

Preparation:

Fry the garlic and onion with oil in the pan. For the tomatoes I now have two variations for you. Either you cut them up with the shell and fry them briefly.

Or you can scratch the tomatoes with a square and put them in hot water. After about 15 minutes, you can simply peel off the tomato peel.

Now cut the tomatoes and add them to the garlic and onions in the saucepan. Now you can taste the sauce with Italian spices, lots of (!!) chili, pepper and salt. Add a dash of olive oil to the sauce. Meanwhile, of course, you cook the pasta of your choice.

Original spaghetti carbonara

The Spaghetti Carbonara will be in Original recipe NEVER made with cream or the like. Spaghetti Carbonara consist only of egg yolks and fried bacon or tofu. The latter would be the vegetarian option.

Ingredients for 2 people:

  • 4 egg yolks
  • 200 g parmesan cheese
  • 150 g bacon cubes or tofu
  • pepper and salt

Preparation:

You fry the bacon cubes or the tofu. Meanwhile, separate the yolks from the whites. All you need for this recipe is the egg yolk. Put the four egg yolks in the bowl, mix them with the parmesan and season with salt and pepper.

Meanwhile, let the spaghetti cook. When the spaghetti is done, remove it. The hot spaghetti is now placed in the bowl with the egg yolk mixture and is quickly mixed there. The heat denatures the egg yolk and becomes creamy. The spaghetti is now surrounded by a delicious creamy sauce.

Now you add the fried bacon or tofu and your original spaghetti carbonara is ready. And believe me: after that you will never want to eat carbonara any other way.

Pasta a la Norma

The Pasta a la Norma we ate and learned to love in → Sicily. Actually, pasta a la Norma is nothing more than pasta with tomato sauce, garnished with aubergine cubes. But this combination of the seared aubergine with the pasta tastes heavenly. You can get the recipe here.

Pasta with basil and pine pesto

Homemade pesto with pasta is super quick, but also very intense. I'm totally into it Basil and pine nut pesto. I think the combination with spaghetti is really delicious. You can also make large quantities of pesto and store it in a sealed jar. It lasts a long time and always tastes fresh. The recipe is very simple.

Ingredients for two people:

  • 1 stick of basil
  • 120 ml olive oil (high quality)
  • 1 clove of garlic
  • 80 g parmesan cheese
  • 50 g pine nuts
  • Sprinkle lemon
  • Salt pepper

Preparation:

Pluck the basil leaves from the stick and put them in a blender with the olive oil and garlic. You can gradually add the olive oil. This will make the pesto creamier. Meanwhile, you can roast the pine nuts. Now add the parmesan, pine nuts and a squeeze of lemon.

Operate the mixer again. Now season with salt and pepper. The pesto itself is very aromatic and therefore requires little salt or pepper.

When the spaghetti is done, pour the pesto over the warm pasta. Believe me, this is a taste explosion. The fresh pesto on the pasta is great.

Pasta with tuna

If you want to add a little protein to your pasta, you can also add tuna. When buying tuna, please pay attention to the origin, as our seas are fished empty of tuna.

Cut the broccoli into small pieces and soak it in hot water for 15 minutes. Let it soften there.

Now add the tomato pieces to the tomato sauce and fry them too. It slowly turns into a sauce. Now you add the can of tuna. Make sure the tuna stays in pieces. So just stir gently.
