Detox Kale Salad Bowl

Green, green, green are avocado, spring onions and edamame. Green, green, green is all I like.

And it is precisely for this reason that these ingredients all end up in a bowl today and bed down on crunchy kale with crispy tofu. In fact, it tastes much better raw than you might think. Do not you think? Then dare to try a large fork. Who knows, maybe the green cabbage will become your new, super healthy favorite vegetable after the first bite.

Preparation steps

Blanch the edamame in boiling salted water for 5 minutes, drain and rinse under cold water. Carefully pry open the shell with your fingers and remove the beans.
Pluck the kale from the stalks and wash. Cut the spring onions into rings.
Cut the tofu into cubes and fry in a pan with sesame oil on all sides until golden brown. Season with salt and pepper and drain on kitchen paper.
For the dressing, peel and finely chop the garlic. Peel and grate the ginger. Whisk with the remaining ingredients and season with salt and pepper.
Mix the kale, edamame and spring onions with the dressing and divide into bowls. Spread the tofu on top. Halve, core and peel the avocado and cut the pulp into thin slices. Season with salt and pepper, sprinkle with sesame seeds and place on top of the kale.
