However, most pairs of protein-polymer are not mixed together, which causes phase separation, which adversely affects the structure, properties and morphology of the leaf. Biophysicists have constructed a phase diagram of ternary mixtures and found that the solution mixture remains homogeneous only at relatively small concentrations, or when the prevailing concentration of the polymer or protein, the system can be considered as two-component. The presence of the spinodal curve – the ratio of substances in which the components of the mixture start to flake characterizes all such systems solvent and immiscible polymer pairs and protein.
